    Date Rice Krispie Balls

    Date Rice Krispie Balls have just a few ingredients & you can whip up these no bake treats in no time. Chewy, crunchy, vegan-friendly, and refined sugar-free. A recipe special enough for a party or holiday and healthy enough for every day.

    Don't you love those simple recipes that you can put together with just a few ingredients and turn it into a delicious treat or snack?

    Yep, me too, and for this one, you don't have to turn on the oven - even better.

    If you're craving something sweet these Date Rice Krispie Balls come together quickly. 

    The bonus is that you can keep them in the fridge for a couple of weeks for a guilt-free snack. Well, if they last that long.

    But more often than not, I pre-make these for a Holiday or when I prepare for a gettogether or party. 

    It's such an easy recipe and they keep so well as a make-ahead treat you can quickly check it off your list when you already have several dishes to think about and prep.

    In fact, these No Bake Chocolate Peanut Butter Cookies are also simple treats that have the winning combo of chocolate and peanut butter covered.

    You want some simple dessert recipes done and ready. Valentine's Day is over but St. Patrick's Day and Easter are right around the corner.

    💭Are rice krispies vegan

    • Kellogg's Rice Krispies are not vegan but many varieties of rice krispies are vegan.
    • We can make as many sweet and chewy treats as we like and these balls offer even a healthier version of a rice krispie treat.
    • Here are a few alternative suggestions of crispy rice cereal that are vegan:
    • Arrowhead Mills Natural Puffed Rice Cereal
    • One Degree Organic Foods Sprouted Brown Rice Crisps Cereal
    • And you'll find many more varieties on shelves from Whole Foods, Sprouts and on many other grocery store shelves that offer natural food alternatives.

     
    You can also make them as need looking as you like.

    📖Healthy Snacks

    • There are many wholesome plant-based ingredients included.
    • And so much healthier with no added refined sugars.
    • They are jammed with chewy goodness because of the dates and coconut.
    • There's a unique twist by adding nutty and crunchy walnuts.
    • One comforting dessert or snack that cares for your body too.

    So if you've got a minute, let's mix up some date rice krispie balls.

    Rice Krispie Balls Ingredients

    • Dairy-free butter - is a healthy fat that helps these treats solidify and create a delicious texture.
    • Maple syrup - added as a healthy sweetener with a caramel-like flavor.
    • Dates - are a natural caramelly sweetener, and they create a chewy texture in contrast to the rice crisps.
    • Walnuts - add a crunchy and nutty bite that also balances out the sweetness.
    • Shredded coconut - has a naturally sweet tropical and nutty flavor.
    • Vanilla extract - adds a warm vanilla-flavored touch to the treats.
    • Vegan Rice Krispie type of cereal - have a crunchy texture that is the main base to these rice krispie balls.

    📋No bake treats

    • Put 1 cup of the rice Krispie type cereal in a ziplock baggie. Crush with a rolling pin or with the side of a glass. Roll it back and forth so that you can use the mixture as a crumb cover on the finished balls. Set aside.
    • Melt the butter and syrup together in a large bowl in the microwave for a few seconds.
    • Add the dates, nuts, coconut, and vanilla. Mix well.
    • Turn in the rice Krispie type cereal until well combined.
    • Put in the refrigerator for about an hour. Take out of the refrigerator and roll into balls.
    • Roll each ball in the crush crumb mixture to cover.
    • Stack in a pile to serve or refrigerate.

    Vegan Date Rice Krispie Balls

    When you make these little balls keep some extra aside for yourself during the week. Trust me on this one.

    Date Rice Krispie Balls are one of those pleasures that you can whip up in no time.

    Ingredients
      

    • 4 ounces dairy-free butter
    • ½ cup maple syrup
    • 8 ounces dates, chopped
    • ½ cup walnuts, chopped
    • 1 cup shredded coconut
    • 1 teaspoon vanilla extract
    • 2 cups of Vegan Rice Krispie type of cereal
    • 1 cup another 1 of the rice krispie cereal for the coating

    Instructions

    Notes

    TO FREEZE:
    You can freeze them in any of the methods shown in my article Preparing Food for the Freezer.
    They defrost quickly so it really doesn't take any planning.
