Ingredients

zucchini
- 2 to 3 small zucchini sliced thinly, about ⅛ - ¼ thick

flour

paprika

aquafaba

vegan parmesan cheese
Instructions
Slice the zucchini into ⅛ - ¼ inch thick chips, using a mandoline slicer gives you uniform thickness and allows even cooking.
In one small bowl add flour, salt & pepper, and paprika. Mix together
In another small bowl add the aquafaba.
A small bowl with panko and vegan parmesan cheese of your choice
Preheat the air fryer at 400F for 5 minutes
Dip the zucchini slices in the flour mixture, then aquafaba, and then the breadcrumbs mixture and place on a baking rack.
Add a single layer of breaded zucchini chips in the bottom of the air fryer basket, spray with vegetable oil.
Fry at 400F for 6-8 minutes but flip at 4 mins.
Cook until chips are browned and crispy but don't overcook. Add any additional salt or pepper to taste.
Serve immediately.
Notes
Store leftovers in the refrigerator in an airtight container
