Zucchini Chips Air Fryer Recipe

Zucchini Chips made in the air fryer are thin, easy, and crispy.

Ingredients

  • 3 cups zucchini - 2 to 3 small zucchini sliced thinly, about ⅛ - ¼  thick
  • ½ cup flour
  • 2 teaspoons paprika
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 ½ cups panko bread crumbs
  • 4 ounces aquafaba - the measurement will vary from the can
  • ¼ cup vegan parmesan cheese

Instructions

  • Slice the zucchini into ⅛ - ¼ inch thick chips, using a mandoline slicer gives you uniform thickness and allows even cooking.
  • In one small bowl add flour, salt & pepper, and paprika. Mix together
  • In another small bowl add the aquafaba.
  • A small bowl with panko and vegan parmesan cheese of your choice
  • Preheat the air fryer at 400F for 5 minutes
  • Dip the zucchini slices in the flour mixture, then aquafaba, and then the breadcrumbs mixture and place on a baking rack.
  • Add a single layer of breaded zucchini chips in the bottom of the air fryer basket, spray with vegetable oil.
  • Fry at 400F for 6-8 minutes but flip at 4 mins.
  • Cook until chips are browned and crispy but don't overcook. Add any additional salt or pepper to taste.
  • Serve immediately.

Notes

Store leftovers in the refrigerator in an airtight container
