Homemade Vegan Pancake Mix

Vegan pancake mix is so easy to make. Mix it with wet ingredients and cook until golden brown. Top with vegan butter, syrup, or fruit for a delicious breakfast!

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp organic granulated sugar
  • 3 tsp baking powder
  • ½ tsp salt

Wet Ingredients

  • 1 chia egg or flax egg
  • ¾ cup dairy free milk
  • 2 tbsp vegetable or canola oil

Instructions

Pancake Mix

  • In a medium bowl, combine all ingredients until well combined.

  • Store in airtight container or jar with lid.

To make Pancakes

  • Add mix to large measuring cup or mixing bowl.
  • Add wet ingredients and whisk until well combined.
  • Heat griddle and spray with cooking spray.
  • Scoop pancake batter onto hot griddle and cook 4-5 minutes or until golden brown.
  • Flip and cook on other side 2-3 minutes or until golden brown.
  • Serve immediately with butter, syrup or fruit.
