Vegan Baked Oatmeal
A flavorful breakfast that can be prepared ahead and enjoyed all week. Packed with blueberries, bananas, and rolled oats, it's the ideal way to start your day.
- 2 ripe bananas
- 3 cups rolled oats
- 2 tsp baking powder
- 2 cups soy milk
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1 cup blueberries (plus more for topping, optional)
Preheat the oven to 350°F (175°C).
Line an 8x8 inch baking pan with parchment paper and set it aside.
Add bananas to a bowl and mash with a fork.
Add the rolled oats, baking powder, soy milk, maple syrup, vanilla extract, and blueberries.
Mix well to combine.
Transfer the mixture to the prepared baking pan. Optionally, press some more blueberries on top. Let the mixture sit for 10 minutes to thicken slightly.
Bake for 30 minutes or until completely firm and golden brown on top.
Slice the oatmeal into the desired shape and serve.
You can use other any type of your favorite berries (such as raspberries or blackberries).
You can use some other type of plant-based milk such as almond or oat milk.
