This apple and pecan baked oatmeal takes fresh, juicy apples combined with warm spices, brown sugar, rolled oats, flaxseed, and almond milk for a creamy bowl of oatmeal!

Ingredients
2cupsrolled oats
½cuppecan nutschopped
1tspbaking powder
2tspcinnamon
¼tspsalt
2cupsalmond milk
¼cupapple sauce or maple syrup
2tspvanilla extract
1tbspflaxseed meal
1tbspvegan buttermelted
2sweet apples
½cupbrown sugar
Instructions
Preheat oven to 350F. Grease an oven-safe tray of 8’’x8’’.
Mix almond milk with a tbsp of flaxseed meal in a large bowl and let it sit for 5 minutes.
Add baking powder, cinnamon, salt, apple sauce, vanilla extract, vegan butter and brown sugar. Stir until combined.
Add rolled oats and stir to combine.
Chop apples and pecan nuts into bite-size pieces and add them to the oats. Stir well to combine.
Put the mix into the greased tray and bake for 35 to 40 minutes or until oats are well set and golden brown around the edges.
Let it cool a bit before serving.
Enjoy it with maple syrup and more cinnamon on top.
Notes
Prepare the oatmeal in advance and just bake it before serving.
Replace apples with bananas or blueberries for a flavour twist.
