Apple And Pecan Baked Oatmeal

This apple and pecan baked oatmeal takes fresh, juicy apples combined with warm spices, brown sugar, rolled oats, flaxseed, and almond milk for a creamy bowl of oatmeal!

Ingredients

  • 2 cups rolled oats
  • ½ cup pecan nuts chopped
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp salt
  • 2 cups almond milk
  • ¼ cup apple sauce or maple syrup
  • 2 tsp vanilla extract
  • 1 tbsp flaxseed meal
  • 1 tbsp vegan butter melted
  • 2 sweet apples
  • ½ cup brown sugar

Instructions

  • Preheat oven to 350F. Grease an oven-safe tray of 8’’x8’’.
  • Mix almond milk with a tbsp of flaxseed meal in a large bowl and let it sit for 5 minutes.
  • Add baking powder, cinnamon, salt, apple sauce, vanilla extract, vegan butter and brown sugar. Stir until combined.
  • Add rolled oats and stir to combine.
  • Chop apples and pecan nuts into bite-size pieces and add them to the oats. Stir well to combine.
  • Put the mix into the greased tray and bake for 35 to 40 minutes or until oats are well set and golden brown around the edges.
  • Let it cool a bit before serving.
  • Enjoy it with maple syrup and more cinnamon on top.

Notes

  • Prepare the oatmeal in advance and just bake it before serving.
  • Replace apples with bananas or blueberries for a flavour twist.
  • Use gluten-free oats if needed.
