Healthy Balsamic Roasted Broccoli

Balsamic Roasted Broccoli is a very quick and satisfying vegetable side dish.

Ingredients

  • ¼ cup coconut oil or extra virgin olive oil
  • 4 cloves garlic, finely diced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 bunches broccoli woody ends and leaves trimmed, cut into florets with the spears attached (see “Freezing” above card, if you wish to freeze the broccoli before serving)
  • 2 tablespoons balsamic vinegar

Instructions

  • Have ready a baking pan that measures about 10" x 13".
  • Combine the coconut oil, garlic, salt, and pepper in a large bowl. Put the broccoli in the bowl and lightly toss to evenly coat the broccoli as best you can.
  • Spread out the broccoli on the baking sheet. At this point you may refrigerate or freeze the broccoli; otherwise, preheat the oven to 425°F.
  • Bake for 7 minutes and then flip the spears with a spatula. Bake for another 8 to 10 minutes, or until you can piece a broccoli spear easily with a fork. 
  • Remove from the oven. Drizzle the balsamic vinegar over the broccoli and toss. Serve hot.

Notes

You can also do this with a half-broccoli and half cauliflower mixture.
