Preheat the oven to 350°F. Lightly grease donut pans with coconut oil for a total of 12 donuts, or use silicone donut pans or non stick.
In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
In a medium-size bowl, combine the coconut oil, milk, mixed chia seed meal and water mixture, vanilla and mix well.
Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the trail mix. Try not to over mix.
Evenly distribute the batter in the prepared pans. Bake for 14 to 16 minutes.
When done, pop the donuts out of the pans and let cool on a wire rack. These are great warm or cold.
