Baked Trail Mix Cake Donuts

Ingredients

  • 1 tablespoon chia seed meal mixed with 3 tablespoons water - this substitutes for one egg
  • cup coconut oil
  • 1 ¼ cups whole wheat flour
  • ¾ cup organic granulated sugar
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ teaspoon dairy free milk of your choice
  • 1 teaspoon vanilla extract
  • ¾ cup trail mix, store bought of your own mix

Instructions

  • Preheat the oven to 350°F. Lightly grease donut pans with coconut oil for a total of 12 donuts, or use silicone donut pans or non stick.
  • In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
  • In a medium-size bowl, combine the coconut oil, milk, mixed chia seed meal and water mixture, vanilla and mix well.
  • Add the dry ingredients to the wet ingredients and mix until just combined.  Fold in the trail mix.  Try not to over mix.
  • Evenly distribute the batter in the prepared pans.  Bake for 14 to 16 minutes.
  • When done, pop the donuts out of the pans and let cool on a wire rack. These are great warm or cold.

Freeze in either a resealable plastic freezer bags or a hard-sided freezer container for up to 3 months.
Defrost in the refrigerator. You can zap them for a few seconds in the microwave right before serving too. See? Easy!
