Peanut Butter Chocolate Chip Bars

Ingredients

  • 1 ¾ cups all-purpose flour
  • ½ cup whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 12 tablespoons dairy free butter, melted, that's 1 ½ sticks
  • ¾ cup light brown sugar, packed
  • ½ cup organic granulated sugar
  • 1 tablespoon flax seed meal, mixed with 3 tablespoons water, this becomes an egg substitute
  • cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 10 ounces to 12 ounces vegan semisweet chocolate chips
  • ½ cup peanuts, chopped

Instructions

  • Preheat the oven to 350°F. 
  • Lay a piece of parchment paper across and over two opposite edges of a 9 x 13-inch baking pan.  This will help you remove the bars from the pan.
  • In a medium-size bowl, mix together the flours, baking powder, and salt.
  • In a large bowl, combine the melted butter and the sugars. Beat with an electric mixer on medium speed until well mixed and smooth.
  • Beat in the egg substitute, peanut butter, and vanilla. Beat well.
  • Add the flour and mix by hand until just combined.
  • Fold in the chocolate chips and peanuts.
  • Turn into the prepared baking pan, smoothing out the top. Bake for 25 minutes.
  • Remove from the oven and let cool on a wire rack.
  • Lift with the foil overhanging “handles” and place on a cutting board. Cut into 24 bars.
