Vegan Oatmeal Raisin Cookies

The perfect mix of sweetness and spice, these cookies are packed with oats, plump raisins, and a hint of cinnamon. They make the perfect treat on an autumn day!

Ingredients

  • ½ cup brown sugar
  • ½ cup sugar
  • ½ cup vegan butter softened
  • 1 flax egg
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 cup flour
  • 1 cup of old-fashioned oats
  • cup raisins
  • ¼ cup chopped almonds

Instructions

  • Preheat oven to 375F.
  • Cream brown sugar, sugar, and vegan butter in a bowl.
  • Add flax egg, baking soda, and cinnamon. Stir.
  • Add flour, oats, raisins, and chopped almonds. Stir to combine until you have a soft dough. Make sure all the flour is well incorporated.
  • Shape the mixture into 12 balls. Arrange the balls onto the baking sheet lined with parchment paper and press down each to flatten.
  • Bake the cookies for 12 minutes.
  • Cool the cookies on a baking sheet for 5 minutes before transferring them onto the wire rack to cool completely.
