Ingredients
½cupbrown sugar
½cupsugar
½cupvegan buttersoftened
1flax egg
½tspbaking soda
1tspcinnamon
1cupflour
1cupof old-fashioned oats
⅓cupraisins
¼cupchopped almonds
Instructions
Preheat oven to 375F.
Cream brown sugar, sugar, and vegan butter in a bowl.
Add flax egg, baking soda, and cinnamon. Stir.
Add flour, oats, raisins, and chopped almonds. Stir to combine until you have a soft dough. Make sure all the flour is well incorporated.
Shape the mixture into 12 balls. Arrange the balls onto the baking sheet lined with parchment paper and press down each to flatten.
Bake the cookies for 12 minutes.
Cool the cookies on a baking sheet for 5 minutes before transferring them onto the wire rack to cool completely.
