Vegan Bolognese Sauce

A "meaty" texture created with carrots, onion, mushrooms, and walnuts, while tomatoes, tamari, and herbs add flavor. Even the kids will love this hearty sauce.

Ingredients

  • 1 tbsp oil, olive, or vegetable
  • 2 cups mushrooms chopped (button, brown, baby Bella)
  • ½ purple onion grated
  • 1 carrot grated
  • Salt and pepper to taste
  • ¼ cup walnuts coarsely grated or finely chopped
  • 2 tsp tamari sauce
  • 1 cup can chopped tomatoes
  • 1 tsp tomato paste
  • 1 tsp Italian herbs
  • ½ cup vegetable broth

To serve with:

  • Desired type of pasta

Instructions

  • Heat oil in a skillet, over medium-high heat.
  • Add mushrooms and cook for 5-6 minutes or until tender.
  • Add onion, carrot, and season to taste with salt and pepper. Cook, stirring, for 3 minutes.
  • Add walnuts and tamari and cook for 1 minute.

  • Make a well in the center, so when you add can tomatoes, they touch the hot skillet surface. Add tomatoes, tomato paste, and Italian herbs. Stir well, cook stirring for 5  minutes and then add vegetable broth.

  • Simmer the sauce for 15 minutes.

  • Serve warm, over freshly cooked pasta.
