Ingredients
1lbwatermeloncubed
1lbvegan sugarlike cane or beet
2tbsplemon juice
2tbspwater
Instructions
Remove the watermelon seeds.
Place watermelon, half the sugar, lemon juice and water in a saucepot.
Bring to a boil. Reduce heat and simmer covered for 10-12 minutes.
Transfer the watermelon into a food blender and blend until smooth.
Place the watermelon puree back into the saucepot along and add remaining sugar.
Cook on a rolling boil for 2 minutes.
Pop the jam into sterilized jars and store it in a cool, dark place.
