Easy 4-Ingredient Watermelon Jam

Watermelon cooked with sugar and lemon juice until thick. Perfect on toast, topping a waffle, or even by the spoonful.  It's the best versatile treat of summer!

Ingredients

  • 1 lb watermelon cubed
  • 1 lb vegan sugar like cane or beet
  • 2 tbsp lemon juice
  • 2 tbsp water

Instructions

  • Remove the watermelon seeds.
  • Place watermelon, half the sugar, lemon juice and water in a saucepot.
  • Bring to a boil. Reduce heat and simmer covered for 10-12 minutes.
  • Transfer the watermelon into a food blender and blend until smooth.

  • Place the watermelon puree back into the saucepot along and add remaining sugar.

  • Cook on a rolling boil for 2 minutes.

  • Pop the jam into sterilized jars and store it in a cool, dark place.
