Vegan Key Lime Pie
A buttery crust baked to golden perfection and filled with delicious key lime filling. Sweet, tart, and delightful this key lime pie is a perfect summer treat!
- 10 ½ oz digestive cookies
- ½ cup vegan butter
- 1 ½ cups vegan condensed milk
- 1 ½ cups canned coconut cream
- ⅓ tsp xanthan gum
- 1 tbsp lime zest
- ½ cup key lime juice
To Make Crust:
Crumble Cookies and put in food processer.
Grind the Cookies to make a powder.
Add the butter
Stir until mixed well.
Press into pan to make pie crust.
Bake 350F 10 min. and allow to cool.
To Assemble Pie:
Add the mixture to the crust.
Refrigerate for several hours.
Optional: Add zest of lime to garnish and serve.
