Vegan Key Lime Pie

A buttery crust baked to golden perfection and filled with delicious key lime filling. Sweet, tart, and delightful this key lime pie is a perfect summer treat!

Ingredients

  • 10 ½ oz digestive cookies
  • ½ cup vegan butter
  • 1 ½ cups vegan condensed milk
  • 1 ½ cups canned coconut cream
  • tsp xanthan gum
  • 1 tbsp lime zest
  • ½ cup key lime juice

Instructions

To Make Crust:

  • Crumble Cookies and put in food processer.

  • Grind the Cookies to make a powder.

  • Add the butter

  • Stir until mixed well.

  • Press into pan to make pie crust.

  • Bake 350F 10 min. and allow to cool.

To Make Filling:

  • Mix condensed milk and coconut cream together.

  • Add Xantham Gum.

  • Zest Lime.

  • Add Lime Juice and mix well.

To Assemble Pie:

  • Add the mixture to the crust.

  • Refrigerate for several hours.

  • Optional: Add zest of lime to garnish and serve.
