Chocolate Cake Cookies
Chocolate Cake Cookies are big and fat and bake up nice and soft on the inside.

- ½ cup vegan butter softened
- 1 cup granulated sugar beet
- 1 egg replacer mixed as per your package directions
- ¾ cup dairy free milk
- 1 teaspoon vanilla
- 2-¼ cup whole wheat pastry flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsweetened cocoa powder
- 1 cup walnuts chopped
Lightly oil cookie sheets.
Mix your egg replacer and set aside.
Cream butter and sugar together. Add the egg mixture and mix through.
Stir in dairy free milk and vanilla. Mix well.
Add the flour, baking soda, salt and cocoa. Mix well.
Add the nuts and mix until well combined.
Place the mixture in the refrigerator from one hour to overnight.
Drop heaping teaspoons onto prepared cookie sheets - 2 inches apart.
Bake at 400 degrees for 8 minutes.
After they have cooled keep them in a cool dry place or the refrigerator or the freezer.
