    Vegan Chocolate Chip Cookies

    Vegan Chocolate Chip Cookies are a favorite in any household. Who doesn’t love big, soft, chewy chocolate chip cookies that remind you of your childhood and is easy too?

    These easy to make homemade cookies are outrageously delicious and rich with vegan chocolate chips goodness.

    Chocolate chip cookies are one of the country’s most favorite baked goods. They are quite popular in my house too.

    I don’t think I exaggerate when I say adults get as excited about them as kids.  They are amazingly soft, a tad crunchy and the perfect dessert for any occasion.

    Nothing compares to that warm chocolatey bite when they come fresh out of the oven.

    I try to fancy up my cookie recipes with more natural ingredients such as with bananas or dates or a multitude of alternative ingredients.

    But hey, we are talking about the iconic chocolate chip cookie here! You know, the one that has countless variations of recipes out there.

    So I focused this time on just a few basic things. The change-ups I made this time was to make sure the sugars were organic, flaxseed meal as the egg substitute and whole wheat flour.

    The cookies are incredibly delicious and easy to make. So easy that you can take your first bite in less than 25 minutes from start to finish.

    And you’ll get a whopping 60 chewy chocolate chip cookies out of this recipe.

    It's chewy in the middle, barely crisp on the edges, rich in chocolate flavors, yet a tad different and more complex with the added walnuts.

    Mission accomplished!

    🥘 Ingredients

    • organic granulated sugar - is classic for a cookie sweetener but organic.
    • organic brown sugar - adds a caramel flavor to the sweetness.
    • dairy-free butter - adds flavor and moisture.
    • flaxseed meal - is the egg substitute for flax egg cookies.
    • whole wheat pastry flour - makes for a healthier twist on the dough.
    • baking soda - is a leavening agent.
    • salt - just the right seasoning.
    • vanilla - is a wonderful flavor that is added to so many baked goods.
    • walnuts - add a little crunch to the texture.
    • chocolate chips - are the stars for a chocolaty flavored cookie.

    🔪 Instructions

    • Mix the flaxseed meal and water and set aside so that it can thicken.
    • Cream both the sugars and vegan butter together, for about 5 minutes with an electric mixer (handheld or stand mixer), until it is light and fluffy.
    • Add in the flax egg and vanilla and mix well.

    • Add the flour, baking soda and salt. Mix well. Fold in the chocolate chips and walnuts.

    • Spoon by a heaping tablespoon or a small cookie scoop size onto an ungreased baking sheet about 2" apart.
    • Bake at 375 degrees for 8-9 minutes. Cool on a wire rack.

    These vegan chocolate chip cookies have a fantastic taste and contrasting textures. 

    📖 Variations

    • You can use pecans or peanuts instead of walnuts.
    • The crunch of toasted nuts adds a wonderful texture to melted chocolate.
    • Use salted nuts if you are big on salty-sweet contrasting flavors.
    • You can use more brown sugar for a super sweet batter or less to only get that hint of extra sweetness.
    • Use sweet, semi-sweet or bittersweet chocolate chips depending on preference.
    • You can add some beautifully colored vegan M&M type of candies such as these Unreal crispy gems on top of the cookies - before they go into the oven.
    • All you have to do is change it based on your tastebuds and what comes out are your best vegan chocolate chip cookies!

    💭 Storing

    • Once baked, these baked goods are best stored in an airtight container for up to 4 days.
    • Or you can freeze them for more extended storage.
    • You can also store the cookie dough the same way as you would store freshly baked cookies. Either refrigerate for up to 4 days in an airtight container or freeze and bake later.

    Ingredients
      

    • ½ cup granulated sugar organic
    • 1 cup brown sugar , packed
    • 1 cup dairy free butter , softened
    • 1 tablespoon flax seed meal and 3 tablespoons water
    • 1 teaspoon vanilla
    • 2 ¼ cup whole wheat pastry flour
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 cup walnuts , chopped
    • 1 cup chocolate chips

    Instructions
     

    • Mix the flax seed meal and water and set aside so that it can thicken.
    • Cream both the sugars and vegan butter together until it is light and fluffy.
    • Add in the flax egg and vanilla and mix well.
    • Add the flour, baking soda and salt. Mix well.
    • Fold in the chocolate chips and walnuts.
    • Spoon by a heaping tablespoon on an ungreased baking sheet about 2" apart.
    • Bake at 375 degrees for 8-9 minutes. Cool on a wire rack.

    Notes

    Great with almond milk.
    TO FREEZE:
    You may freeze them in any of the methods shown in my article How to Prepare Food for the Freezer.
    They defrost quickly so it really doesn't take any planning. Just put them on a plate for an hour or so and enjoy.

      Hi Ginny, Is there another flour like a gf flour?

      You can use a 1:1 gluten free flour Kay. Bob's Red Mill has one and also Arrowhead MIlls. I'm sure there are others.
