Gorgeous layers of red, orange, and yellow blend together in this stunner of a cocktail! Its looks are rivaled only by the taste–a lovely balance of refreshing orange juice, sweet grenadine, and crisp sparkling wine.

I’m not always an orange juice girl in the mornings, but when sipped on a slow sunday morning with a splash of bubbly–you bet I’ll take that over a cup of coffee any day! 

You don’t have to wait for weekend brunch to get the best mimosa though. I love making them at home as I can be in control of the ratio and ingredient quality. Using fresh squeezed orange juice is more than worth it in my book.

A classic mimosa is wonderful enough, but sometimes I’m in the mood for a little something different and these Sunrise Mimosas are just the ticket.

P.S. Sunrise mimosas are just as good at sunset! Enjoy in the evening or as a nightcap, and they are a lovely sweet treat to have for dessert. 

Ingredient Notes

  • Dry sparkling wine – Choose a dry or semi-dry sparkling white wine as this will provide the best balance to the sweetness of the juice. No need to splurge on expensive Champagne (unless you want to of course!); a good-quality Prosecco or Cava works perfectly.
  • Chilled orange juice – When it comes to mimosas, I say it’s worth it to use fresh orange juice if you can! It has an especially vibrant flavor that is worth the squeeze. You can of course go with bottled juice though, just make sure it is pure, pulp-free, cold-pressed, and free from added sugars. 
  • Grenadine syrup – A sweet, pomegranate flavored syrup that has a brilliant red coloring! This is the key ingredient to making our beautiful sunrise cocktail. 
  • Orange slices, for garnish – Use a sharp knife to cut a small slit in each slice of orange so that it can slide onto the edge of the glass. 

Step-by-Step Instructions

  1. Pour sparkling wine. Fill each champagne flute just about to the top with sparkling wine, then the bubbles will sink down leaving each glass about half full. The general rule of thumb is that 1 bottle of champagne or sparkling wine will make about 6 mimosas, but go ahead and make however many you need!
  2. Add orange juice. Fill each glass the rest of the way with chilled orange juice, leaving just a bit of space to the top as we still need to add one more ingredient.
  3. Drizzle grenadine. Slowly pour a splash of grenadine syrup (about ½ ounce) into each drink, letting it run down the inside of the glass. The density of the grenadine will cause it to fall and collect in the bottom of the glass, creating that layered sunrise effect we’re after!
  4. Garnish. Slip an orange slice for garnish onto the rim of each glass and start sipping!

How To Store

Refrigerating Mixed drinks like mimosas don’t store all that well, so I recommend only making as many cocktails as you plan to drink. 

Keep any leftover sparkling wine tightly sealed in the refrigerator. You can use a champagne stopper (specially designed to keep the fizz in!), or use a piece of plastic wrap tightly secured with a rubber band.
