My easy chocolate covered almonds are a decadent treat, made with luscious dark chocolate and crunchy almonds. A dusting of cinnamon adds some subtle spice while keeping this chocolate snack mess free!

I love to give homemade food gifts, but sometimes, they end up taking more time and being more costly than just simply buying something! Over the years I have developed my go-to options for gift giving, and these vegan dark chocolate almonds right at the top of it. 

No mile long ingredient lists here. You need just 3 ingredients–which you may already have in your pantry!–and more importantly, everyone always loves them. 

A lot of chocolate coated candies and truffles are dusted in cocoa powder, but I find this always ends up messy when the cocoa powder starts melting onto your hands. I started dusting my version with cinnamon instead and have never looked back! 

These irresistible chocolate-covered crunchy treats are clearly homemade and when packed into a cute jar or gift packaging, they feel really special. They are one of my best hacks for the holiday season, but are also the perfect hostess gift, valentine’s treat, or goodie bag filler.

  • Vegan chocolate – Use whatever type of vegan chocolate is your favorite! Rich dark chocolate, good-quality semisweet chocolate, or creamy milk chocolate (yes, there are vegan versions!) all work well here. If you use chocolate bars you’ll need to give them a quick chop, or you can reach for a bag of vegan milk or dark chocolate chips or chunks to speed things up a bit. 
  • Almonds – I love the warm nutty flavor of roasted almonds for this treat, but raw almonds work perfectly well too. I even use salted almonds sometimes and the result is an addictively sweet n’ salty flavor. 
  • Ground cinnamon – Used as a final coating on the chocolate covered almonds, this helps to keep them from sticking together as well as adds a sweetly spicy taste to this treat. 

Step-by-Step Instructions

  1. Melt. Place your chopped vegan chocolate or chocolate chips in a microwave safe bowl. Heat it in the microwave on high, stirring every 15 seconds or so, until the chocolate is completely melted and smooth.
  2. Combine. Add the almonds to the bowl of chocolate.
  3. Stir. Stir the mixture until all of the almonds are fully covered in a melted chocolate coating.
  4. Arrange and freeze. Use a fork to remove the chocolate coated almonds from the bowl one at a time, placing them on a parchment paper lined baking sheet as you go. Leave any excess chocolate in the bowl and transfer the coated almonds to the freezer; freeze until firm.
  5. Toss. Once hardened, place the almonds in a bowl and sprinkle with ground cinnamon. Toss gently until the chocolate almonds are coated.
  6. Enjoy! Serve as desired or pack your candies into jars or candy bags for gift giving.

Tips From Ligia

When melting chocolate, keep it dry!

Be very careful not to get any moisture into your vegan chocolate during melting. Even just a few drops of water can cause it to seize up, taking on a grainy texture that is difficult to work with. Take the extra moment to ensure the bowl you choose as well as any utensils you plan to stir it with are dried well.

How To Store

At room temperature Store your leftover chocolate-covered almonds in an airtight container at room temperature. Keep them in a cool location, such as a pantry cupboard, away from any heat sources.

Refrigerating If you live in hot weather, you may opt to keep your chocolate-covered almonds in the fridge to prevent melting.

Freezing If even longer storage is necessary, you can freeze the chocolate almonds in a tightly sealed container for up to 3 months. Keep in mind that they may develop chocolate bloom–that white-ish streaky or powdery coating of cocoa butter on the surface–as the cold chocolate comes back to room temperature, and while it isn’t as pretty, they’ll still taste great!

Ingredients
  

  • 5 oz. chopped vegan chocolate (any type of vegan dark, bittersweet, semi-sweet, or milk chocolate will work)
  • 1 1/2 cups whole almonds
  • 1 Tbsp ground cinnamon

Instructions
 

  • Place your chopped vegan chocolate or chocolate chips in a microwave safe bowl. Heat it in the microwave on high, stirring every 15 seconds or so, until the chocolate is completely melted and smooth. 
  • Add the almonds to the bowl of chocolate. 
  • Stir the mixture until all of the almonds are fully covered in a melted chocolate coating. 
  • Use a fork to remove the chocolate covered roasted almonds from the bowl one at a time, placing them on a parchment paper lined baking sheet as you go. Leave any excess chocolate in the bowl and transfer the coated almonds to the freezer; freeze until firm. 
  • Once hardened, place the almonds in a bowl and sprinkle with ground cinnamon. Toss gently until the chocolate almonds are coated.
