Delicious chickpea fritters made from nutty garbanzos, sweet red pepper, sharp red onion, and summery parsley evoke strong Mediterranean vibes! With a side of Tzatziki sauce for dipping, the only things missing are white sand and blue water.

One of my favorite salads is a quick and simple mixture of chickpeas, red onion, parsley, and lemon vinaigrette, so I started to have some ideas on what else I could turn those same few simple ingredients into. 

Chickpea fritters of course! 

The centers of these crispy chickpea patties stay nice and moist while the surfaces become all golden-brown crispy deliciousness. I make these as an appetizer, to serve on top of leafy green salads, or use them as part of a mezze platter. 

Don’t forget the Vegan Tzatziki for topping and dipping! 

Ingredient Notes

  • Chickpeas (garbanzo beans) – Though you could cook your own homemade batch of chickpeas, canned chickpeas are just unbeatably convenient in my book! I usually opt for low-sodium or no-salt cans of chickpeas so that I can control the level of seasoning myself, Make sure to drain the canning liquid off and rinse the chickpeas under running cold water before using them.
  • Fresh parsley – Adds a great pop of color and bite of freshness. Stick with fresh herbs and avoid the dried stuff here. 
  • Garlic powder – I like the way garlic powder creates an even flavor in these patties, but you could use fresh garlic cloves if thats what you have–2 small cloves, finely minced should do the job.
  • Red bell pepper – Gotta love the sweet flavor and vibrant color of red pepper! Yellow or orange will work too, but avoid green pepper as its flavor is just a bit too different. 
  • Red onion – We only need about half of a small red onion for these fritters, and you can simply cut it into quarters as the food processor will be doing the rest of the work. 
  • Salt and black pepper – Simple seasonings so that the other ingredients stay front and center! If using salted canned chickpeas, reduce any additional salt or skip it entirely. 
  • Chickpea flour – Using chickpea flour as the binding agent for these fritters echoes their nutty chickpea flavor nicely, but plain all-purpose wheat flour is fine too.
  • Lime – Gives your chickpea fritters a blast of bright and tangy flavor, as well as adds moisture which will help the patties to hold together. You can use lemon juice instead if you already have it on hand. 
  • Neutral oil – This will be used to fry the chickpea fritters, so it’s important to choose an oil with a high smoke point such as canola, sunflower, avocado, or vegetable oil. 

Step-by-Step Instructions

  1. Combine ingredients. In a food processor, combine drained and rinsed chickpeas, fresh parsley, garlic powder, roughly chopped red bell pepper, and red onion quarters. Season to taste with salt and black pepper.
  2. Start blending. Process the chickpea mixture until it has a coarse texture. Stop the motor to scrape down the sides with a rubber spatula as needed.
  3. Add flour and juice. Sprinkle in the chickpea flour and the juice of half a lime.
  4. Finish blending. Continue processing the mixture until it comes together and is fairly uniform. It’s okay if there are a few larger chunks in the mix though, they add great texture! If you feel like the mixture is too dry to form together, you can add a few tablespoons of water until it reaches a better consistency.
  5. Shape and cook patties. Divide the mixture into 6 equal portions, then roll and flatten each to form a patty. Heat some oil in a large nonstick skillet over medium-high heat. Carefully add the chickpea patties into the hot oil and cook until golden brown on each side and warmed through. Drain on paper towels.
  6. Serve! Serve immediately, with some Vegan Tzatziki on the side for dipping.

Tips From Ligia

To keep the chickpea dough from sticking to your hands:

Lightly moisten the palms of your hands with water when forming and shaping the patties to prevent it from sticking to you. Avoid using too much water though, as excess water on the surface of the fritters could cause the oil to splatter when you go to pan fry them.

Refrigerating You can store fully cooked chickpea fritters, or store the chickpea fritter mix itself. If storing cooked fritters, let them cool completely before storing.

Cooked fritters: Place leftover chickpea fritters in an airtight container lined with paper towels to absorb moisture and refrigerate for up to 5 days.

Uncooked mixture: Pack the fritter mixture in an airtight container and refrigerate for up to 2 days. When you go to shape the fritters, make sure to re-mix the dough as some of the moisture may have seeped out during storage. If you want to shape the uncooked patties ahead of time, just place them on a tray lined with parchment, and wrap tightly with plastic wrap before storing for up to 2 days.

Freezing 

Cooked fritters: Arrange in a single layer on a parchment paper lined baking sheet and freeze for about 1-2 hours until solid. Transfer the frozen patties to a freezer-safe airtight container or zip-top bag, separating layers with parchment paper, and freeze for up to 3 months.

Uncooked fritters: Shape the uncooked mix into patties, arrange them on a parchment paper lined baking sheet, and freeze for about 1-2 hours until firm. Transfer to a freezer-safe bag or container, separating layers with parchment paper, and freeze for up to 2 months.

Thawing No need to thaw, you can cook frozen chickpea fritters straight from the freezer, adding a few extra minutes to the cooking times.

Reheating 

Cooked fritters: Reheat your fritters in an oiled skillet over medium heat until lightly crisped and warmed through, or, bake them in a preheated 350°F oven for 10-12 minutes.

Uncooked fritters: Cook them as instructed in the recipe, starting with Step 5.
