    This vegan apple and pecan baked oatmeal takes fresh, juicy apples and combines them with warm spices, brown sugar, rolled oats, flaxseed, and almond milk for a creamy bowl of oatmeal that’s perfect on a cold winters day!

    I can’t think of a cozier way to start a morning than with a hot bowl of apple oatmeal.  It’s sweet, warm, filling, and smells delicious.  I love all kinds of oatmeal, but this vegan oven-baked oatmeal recipe combines brown sugar and cinnamon-spiced apples with pecans and rolled oats, putting it at the top of my list! You’ll think that you’re biting right into a warm apple pie.

    This easy-baked oatmeal recipe is perfect for those busy mornings. You know, the ones where the alarm never went off, and you can’t find your keys?  You can make this apple baked oatmeal ahead of time and simply throw it in the oven to have it bake while you are getting ready. How easy is that?  

    An added bonus - It will make your house smell so delicious that you’ll have to resist curling up with a bowl of this spiced apple oatmeal by the fire. What a great way to start the day!

    • 8x8 Oven Safe Tray
    • Large Mixing Bowl
    • Spoon
    • Handheld Chopper or Food Processor

    Ingredients For Your Vegan Apple & Pecan Baked Oatmeal with Rolled Oats

    • 2 cups rolled oats
    • ½ pecan nuts (chopped)
    • 1 tsp baking powder
    • 2 tsp cinnamon
    • ¼ tsp salt
    • 2 cups almond milk
    • ¼ cup applesauce or maple syrup
    • 2 tsp vanilla extract
    • 1 tbsp flaxseed meal
    • 1 tbsp vegan butter (melted)
    • 2 sweet apples
    • ½ cup brown sugar

    How To Make A Vegan Apple Baked Oatmeal

    Step 1: Preheat the oven to 350 degrees F.  Grease an 8x8 baking tray.

    Step 2: Mix almond milk with a tbsp of flaxseed meal in a large bowl and let it sit for 5 minutes.

    Step 3: Add baking powder, cinnamon, salt, applesauce, vanilla extract, vegan butter, and brown sugar.  Stir until combined.

    Step 4: Add rolled oats and stir to combine.

    Step 5: Chop apples and pecan nuts into bite-size pieces and add them to the oats.  Stir well to combine.

    Step 6: Put the mix into the greased tray and bake for 35 to 40 minutes, or until oats are well set and golden brown around the edges.

    Step 7: Let it cool a bit before serving.

    Step 8: Enjoy it with maple syrup and more cinnamon on top.

    Your Spiced Apple Baked Oatmeal will last for 4-5 days in the fridge, but once you have tasted how delicious it is, I doubt that it will last that long!

    Can I Freeze Vegan Apple Pecan Baked Oats? 

    You can freeze your vegan apple pecan baked oats for up to three weeks if stored in a sealed, air-tight container.  To make it easier to reheat, cut it into sections of individual servings and store them in separate containers.

    How To Reheat Baked Oatmeal with Apples & Pecans

    If you would like to reheat the whole batch of baked oatmeal with apples and pecans at once, use aluminum foil to cover the pan and reheat it in the oven for 20 minutes at 350 degrees F. 

    If you have divided it into smaller portions, bake for 5-10 minutes, or until warm.  Reheating in the oven is recommended, but you can also reheat smaller servings in the microwave for about 1 minute, or until warm. Add the toppings after reheating.

    Can I use frozen fruit?

    Yes. You can add frozen fruit into your baked oats either in addition to or instead of the apples. The bake time will stay the same.

    Can I make this gluten-free?

    Yes. You can use gluten-free oatmeal to make this spiced apple baked oatmeal recipe gluten-free.

    Can I make this ahead of time?  

    Yes. You can make this baked apple pecan vegan oatmeal ahead of time and store it in the fridge until you’re ready to bake it.
                

    Why do I need to use baking powder?

    The baking powder in this baked oats recipe will keep your oatmeal from getting too dense and chewy.  It gives it a soft, light texture.  

    Do I need to peel the apples?  

    No. In this oven baked apple oatmeal recipe, you can leave the peel on the apples.  You can slice them into the size that you prefer.

    Can I substitute the rolled oats for steel cut oats?

    No. Steel cut oats do not have the same texture and do not bake as well.
