Soy sauce soaked, garlic sprinkled, super savory mushrooms in a bite-sized crunchy package! Air fryer mushrooms are nice and creamy on the inside with plenty of irresistibly crispy edges.

For my family, no holiday is complete without roasted mushrooms. Traditionally though, they’d be cooked with a ton of butter. Besides not being vegan-friendly, they also come out so rich – a little too rich at times! 

So I created this air fryer version of our family classic. It turns out just as craveably crisp as the original, but is free from any dairy ingredients and is much lower on the richness scale. They are the perfect accompaniment to a main course, and I’ve also served them as a crispy, poppable appetizer!

Whether part of a dinner spread or served as a happy hour or game day snack, these bite sized air fried mushrooms are entirely addictive. 

Ingredient Notes

  • White button mushrooms – Standard white mushrooms work great in this recipe, but cremini mushrooms (also called baby portobello mushrooms) are just as good. In either case, make sure to use fresh mushrooms here, as frozen or canned mushrooms will not produce the same result. 
  • Olive oil – To help your mushrooms get nice and crisp! Since we’ll be air frying at high heat, opt for light or regular olive oil, not extra virgin. 
  • Soy sauce – Gives your mushrooms a deep savory flavor as well as a roasty brown coloring. Regular, low sodium, or tamari soy sauce are all good options. 
  • Garlic powder – One of my favorite seasonings to pair with mushrooms, pungent garlic is just the thing to complement earthy mushroom flavor. I use garlic powder instead of fresh garlic here so that it doesn’t burn. 
  • Salt and black pepper – You can add as much or as little salt and pepper as you like, but keep in mind that mushrooms are like little sponges, so you may need a bit more salt than you’d think!
  • Fresh parsley – A pop of green color and fresh flavor to top things off. 

Step-by-Step Instructions

  1. Combine ingredients. Preheat your air fryer to 400℉. In a large mixing bowl, combine halved button mushrooms, olive oil, soy sauce, garlic powder, salt, and black pepper.
  2. Toss to coat. Use a spoon to toss and stir the mushrooms until evenly coated in the oil and seasonings.
  3. Cook. Transfer the mushrooms to your preheated air fryer and arrange them in a single layer. Depending on the size of your air fryer basket, you may need to cook them in batches. Air fry for about 15 minutes.
  4. Garnish and serve. Transfer the cooked mushrooms to a serving bowl and garnish with fresh chopped parsley. Serve and enjoy!

Tips From Ligia

Clean your mushrooms like a pro:

Debris on mushrooms is common, but you don’t need any fancy brushes to remove it. Clean mushrooms by simply giving them a gentle wipe with a damp paper towel or a clean kitchen towel. Avoid exposing them to water, as mushrooms are very porous and will readily absorb any moisture.

To get the best air fried mushroom texture:

Choose the freshest mushrooms you can find and as mentioned above, keeping them away from water is important. Dry mushrooms result in the best, crispiest exterior.

How To Store

Refrigerating Store your leftover mushrooms in an airtight container in the fridge for up to 5 days.

Freezing Air fried mushrooms freeze really well! Just pack them into a freezer safe airtight container or freezer bag and they’ll keep for up to 3 months.

Thawing Transfer your frozen mushrooms to the fridge for several hours or overnight to thaw them.

Reheating Toss the mushrooms in a lightly oiled hot skillet for a few minutes until warm, or simply pop them back into your air fryer for 5 minutes or so until nice and hot.

Ingredients
  

  • 14 oz. white button mushrooms, halved (or quartered if using larger mushrooms)
  • 1 1/2 Tbsp olive oil
  • 1 1/2 Tbsp soy sauce
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
