Tortillas are such a versatile wrap. Cold, warm or hot the recipes seem endless. I came up with a good one. My Rice and Beefless Beef Burritos are easy and full of flavor. You quickly fry them in a bit of oil and that is it. Serve with refried beans, avocado salsa and a salad. Whoa! They freeze perfectly so you can always grab one on the run too.
1 package (about10 ounces) vegan beef strips
1 package ( about 10 ounces) vegan cheddar cheese
8 oz. raw rice
1 can organic corn
1 can organic diced tomatoes (you can also use 2 fresh tomatoes, diced)
Coconut Oil for frying
Cook the rice according to your package directions, use a rice cooker if you prefer. Set aside.
Put the vegan beef strips in a food processor and grind to a coarse grind. Set aside.
Grate the vegan cheese if it isn't already, If it is a block or round, chop into little chucks. Set aside.
Drain the can of corn and rinse. Set aside.
Drain the tomatoes but save the juice in the freezer. You can use it in any future soup, casserole etc.
This is where I lay out all the tortillas on the counter and divide each ingredient evenly between the 10 tortillas. Spread the mixtures down the middle.
Fold the tortilla over the center ingredients.
Use a pull back motion with your fingers on the top tortilla layer to tighten the center.
Roll up tight.
Heat the oil to medium in a large frying pan.
Lightly fry the tortillas on all four sides. One or two at a time. Fry to the deepest color that you prefer. Watch closely.
If you are making them to freeze - fry to a lighter color and then you can re-fry them again after defrosting.
Serve when you are all done frying. Great with refried beans.
Let come to room temperature.

TO PREPARE AFTER FREEZING:
Take out of freezer and put in the refrigerator at least 6 to 8 hours before wanting to serve. You can re-fry them or zap them in the microwave for about 30 seconds. Turn over and cook another 30 seconds.
Great for on the run too.
