Cookie Time! It’s not Christmas, it’s not your birthday, my nieces aren’t coming over. Why am I baking cookies? Because everybody loves them. Lacy Chocolate Oatmeal Cookies is a recipe that I have been working on for a while and I finally got it just right. The dough is rolled into a ball and left that way. As the cookies bake they spread out - big – and are left with pretty little lacy holes around the edges. The cross between the chewy and the crispy and of course the chocolate is yummy.
Ingredients 1/3 cup semi sweet chocolate chips
1/2 cup vegan butter, softened
1 cup granulated sugar (I use beet sugar which is any sugar not marked cane sugar)
1 egg replacer and 3 Tablespoons water
1-1/2 teaspoon vanilla extract
3/4 cup whole wheat pastry flour
1 teaspoon baking powder
1-1/2 cup old fashioned oats Directions Lightly grease a cookie sheet with canola oil.
Mix the egg replacer with the water and set aside.
Melt the chocolate over a double boiler.
Put the butter in a medium bowl.
Add the sugar to the butter and beat it at medium speed with a hand mixer until it is light and fluffy.
Be patient.
To the sugar mixture add the egg replacer mix, vanilla extract and the melted chocolate.
On low speed add the flour and baking powder.
Blend well.
Stir in oatmeal by hand.
Chill for 30 minutes.
Roll cookie dough into about 3/4" balls.
Place far apart (by about 2") on the cookie sheet. The cookies really spread out.
They do not work on a silpat or a cookie pad of that kind.
Bake at 350° for 8 minutes.
Let cool for just a minute or so and then use a spatula to put on a wire rack to cook.
Store in a tightly closed container or in the freezer.

These cookies are really delicious! Crispy, chewy, just the right mix of chocolate toffee flavor. My oven needed 2 additional minutes of cooking time before the cookies spread and were done – and needed closer to five minutes to cool in the pan in order to lift them off without falling apart.
A perfect recipe for company, they look really nice, taste wonderful and have a great texture.

I am so glad you tried these cookies and thank you for the nice feeddback. In your other message you asked why it says you posted the scones. I do not know why it says that. It is the first time I saw that mistake. It must be a glitch. I am the one who posted the scones and I will have to check out the program. Don´t worry about that though – it really means nothing.
