BBQ Chicken Sandwich is a title that brings back happy memories for many. The tangy barbeque sauce is a flavor that one can’t forget and even the bottled sauce is in every ones cupboard. You can follow this recipe to the tee or if you have very specific eaters in your house you can substitute the bottled sauce. If you do this I would recommend adding the sauce to the onion and peppers in the saute pan. My BBQ sauce is milder than the store bought sauce but it will add to your recipe base and is equally delicious. Don’t you love options? That is what is so fun about cooking. A little of this and a little of that and you have a great meal. Try this recipe for your next casual lunch or dinner and you will receive some very nice compliments.
1 package meatless chicken strips (I used Morning Star Meal Starters 100% vegan)
2 Tablespoons Organic Coconut Oil
1 small yellow onion, finely diced
1 small green pepper, finely diced
8 oz. can tomato sauce
1/2 cup ketchup
1/2 cup water
1 Tablespoon chili powder
2 Tablespoons vegan Worcestershire Sauce
2 Tablespoons agave syrup
1 Tablespoon Organic Yellow Mustard
1 Tablespoon Organic Coconut Sugar
1/2 teaspoon salt
1/4 teaspoon pepper
6 whole wheat hamburger buns
Heat the oil in a large skillet.
Add the onion and green pepper and saute for about 10 minutes.
Add the cut up meatless chicken pieces and cook about 10 more minutes and you will get a little browning on this chicken. This is good.
(Now is when you can cut corners and add the bottled barbecue sauce, depends on your time schedule).
To continue with my recipe:
Add all the other ingredients to the pan and cook for 15 minutes or until the sauce has become thick and carmelized. Imagine it being on a bun so it needs to be thick.
Put on buns and serve with a great pasta salad or a yummy green salad.
Let cool to room temperature.

TO PREPARE AFTER FREEZING:
Remove from the freezer and put in the refrigerator overnight because it is a pretty solid mass and will take longer to defrost.
When serving -
Put all in a large saucepan and heat through. You could also heat in a microwave but cover the microwave safe bowl with a paper towel or it will splatter all over on the inside of your microwave.
Ready to serve.
